Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Shrimp - 100 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Fish fillet (white fish) - 100 grams, cut into bite-sized pieces
  • Chinese sausage - 50 grams, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 10 grams, minced
  • Spring onions - 2 stalks, chopped
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Coriander leaves - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a claypot or a heavy-bottomed pot, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
  3. Stir in the sliced Chinese sausage and cook for 2-3 minutes until slightly browned.
  4. Drain the soaked rice and add it to the pot, stirring well to coat the rice with the oil and sausage.
  5. Pour in 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 10 minutes.
  6. After 10 minutes, add the shrimp, squid, and fish pieces on top of the rice. Drizzle with soy sauce and oyster sauce, and season with salt and pepper.
  7. Cover the pot again and cook for an additional 10-12 minutes until the seafood is cooked through and the rice is tender.
  8. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, mixing in the seafood.
  9. Garnish with chopped spring onions and coriander leaves before serving.
