- Jasmine rice - 150 grams
- Water - 300 ml
- Shrimp - 100 grams, peeled and deveined
- Squid - 100 grams, cleaned and sliced
- Fish fillet (white fish) - 100 grams, cut into bite-sized pieces
- Chinese sausage - 50 grams, sliced
- Garlic - 3 cloves, minced
- Ginger - 10 grams, minced
- Spring onions - 2 stalks, chopped
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Coriander leaves - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
- In a claypot or a heavy-bottomed pot, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
- Stir in the sliced Chinese sausage and cook for 2-3 minutes until slightly browned.
- Drain the soaked rice and add it to the pot, stirring well to coat the rice with the oil and sausage.
- Pour in 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 10 minutes.
- After 10 minutes, add the shrimp, squid, and fish pieces on top of the rice. Drizzle with soy sauce and oyster sauce, and season with salt and pepper.
- Cover the pot again and cook for an additional 10-12 minutes until the seafood is cooked through and the rice is tender.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, mixing in the seafood.
- Garnish with chopped spring onions and coriander leaves before serving.
