Ingredients
- Arborio rice - 150 grams
- Chicken broth - 500 milliliters
- Water - 100 milliliters
- Shrimp, peeled and deveined - 100 grams
- Squid, cleaned and sliced - 100 grams
- Mussels, cleaned - 100 grams
- Green peas - 50 grams
- Carrot, diced - 50 grams
- Bell pepper, diced - 50 grams
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Shallots, finely chopped - 1 medium
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Spring onions, chopped - for garnish
Steps
- In a saucepan, heat the chicken broth and water together until simmering. Keep warm over low heat.
- In a large skillet, heat olive oil over medium heat. Add shallots, garlic, and ginger, and sauté until fragrant, about 2 minutes.
- Add the Arborio rice to the skillet, stirring to coat the grains with oil for about 1-2 minutes until slightly translucent.
- Pour in the soy sauce, stirring well to combine. Begin adding the warm broth gradually, one ladle at a time, stirring continuously until the liquid is absorbed before adding more.
- After about 10 minutes, add the diced carrot and bell pepper to the risotto, continuing to stir and add broth as needed.
- When the rice is almost cooked (about 15 minutes in), add the shrimp, squid, and mussels to the skillet. Stir well and cook for another 5-7 minutes until the seafood is cooked through.
- Finally, stir in the green peas and sesame oil. Season with salt and black pepper to taste.
- Remove from heat and let it rest for a couple of minutes. Serve hot, garnished with chopped spring onions.
