Ingredients

  • Arborio rice - 150 grams
  • Chicken broth - 500 milliliters
  • Water - 100 milliliters
  • Shrimp, peeled and deveined - 100 grams
  • Squid, cleaned and sliced - 100 grams
  • Mussels, cleaned - 100 grams
  • Green peas - 50 grams
  • Carrot, diced - 50 grams
  • Bell pepper, diced - 50 grams
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Shallots, finely chopped - 1 medium
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Spring onions, chopped - for garnish

Steps

  1. In a saucepan, heat the chicken broth and water together until simmering. Keep warm over low heat.
  2. In a large skillet, heat olive oil over medium heat. Add shallots, garlic, and ginger, and sauté until fragrant, about 2 minutes.
  3. Add the Arborio rice to the skillet, stirring to coat the grains with oil for about 1-2 minutes until slightly translucent.
  4. Pour in the soy sauce, stirring well to combine. Begin adding the warm broth gradually, one ladle at a time, stirring continuously until the liquid is absorbed before adding more.
  5. After about 10 minutes, add the diced carrot and bell pepper to the risotto, continuing to stir and add broth as needed.
  6. When the rice is almost cooked (about 15 minutes in), add the shrimp, squid, and mussels to the skillet. Stir well and cook for another 5-7 minutes until the seafood is cooked through.
  7. Finally, stir in the green peas and sesame oil. Season with salt and black pepper to taste.
  8. Remove from heat and let it rest for a couple of minutes. Serve hot, garnished with chopped spring onions.
