Ingredients
- Cooked jasmine rice - 300 grams (preferably day-old)
- Shrimp (peeled and deveined) - 100 grams
- Squid (cleaned and sliced) - 100 grams
- Green peas - 50 grams
- Carrot (diced) - 50 grams
- Red bell pepper (diced) - 50 grams
- Spring onions (chopped) - 2 stalks
- Garlic (minced) - 2 cloves
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Eggs - 2 (beaten)
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and stir-fry for about 30 seconds until fragrant.
- Add shrimp and squid to the skillet, cooking until shrimp turn pink and squid is cooked through (about 3-4 minutes). Remove seafood from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil and the diced carrots and red bell pepper. Stir-fry for about 2-3 minutes until they are slightly tender.
- Add green peas and the cooked jasmine rice to the skillet, breaking up any clumps. Stir-fry for another 3-4 minutes.
- Push the rice mixture to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked, then mix them into the rice.
- Return the cooked seafood to the skillet along with chopped spring onions, soy sauce, sesame oil, salt, and black pepper. Stir everything together until heated through.
- Taste and adjust seasoning if necessary, then remove from heat and serve hot.
