Ingredients

  • Cooked jasmine rice - 300 grams (preferably day-old)
  • Shrimp (peeled and deveined) - 100 grams
  • Squid (cleaned and sliced) - 100 grams
  • Green peas - 50 grams
  • Carrot (diced) - 50 grams
  • Red bell pepper (diced) - 50 grams
  • Spring onions (chopped) - 2 stalks
  • Garlic (minced) - 2 cloves
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Eggs - 2 (beaten)

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and stir-fry for about 30 seconds until fragrant.
  3. Add shrimp and squid to the skillet, cooking until shrimp turn pink and squid is cooked through (about 3-4 minutes). Remove seafood from the skillet and set aside.
  4. In the same skillet, add another tablespoon of vegetable oil and the diced carrots and red bell pepper. Stir-fry for about 2-3 minutes until they are slightly tender.
  5. Add green peas and the cooked jasmine rice to the skillet, breaking up any clumps. Stir-fry for another 3-4 minutes.
  6. Push the rice mixture to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked, then mix them into the rice.
  7. Return the cooked seafood to the skillet along with chopped spring onions, soy sauce, sesame oil, salt, and black pepper. Stir everything together until heated through.
  8. Taste and adjust seasoning if necessary, then remove from heat and serve hot.
