Ingredients

  • Shrimp - 150 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Firm tofu - 200 grams, cubed
  • Coconut milk - 200 ml
  • Curry powder - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Spring onion - 2 stalks, chopped
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Vegetable oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish

Steps

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  3. Stir in the curry powder and cook for another minute.
  4. Pour in the coconut milk and bring to a gentle simmer.
  5. Add sliced bell pepper, julienned carrot, and cook for 5 minutes until tender.
  6. Add the shrimp and squid, cooking for an additional 5 minutes until the seafood is cooked through.
  7. Gently add the cubed tofu to the skillet, stirring carefully to avoid breaking the tofu.
  8. Season with soy sauce, lime juice, salt, and black pepper, cooking for another 2-3 minutes.
  9. Remove from heat and garnish with chopped spring onions and fresh coriander before serving.
