- Ginger (sliced) - 1 teaspoon
- Spring onions (chopped) - 2 stalks
- Soy sauce (low sodium) - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro (for garnish) - a handful
Steps
- In a pot, bring the vegetable broth to a simmer over medium heat.
- Add minced garlic and sliced ginger to the broth, allowing it to infuse for about 5 minutes.
- Stir in the soy sauce, sesame oil, salt, and black pepper to taste.
- Add the rice noodles to the broth and cook according to package instructions, usually around 5-7 minutes.
- Once the noodles are almost done, add the shrimp, squid, and fish pieces to the pot and cook for an additional 3-5 minutes until the seafood is cooked through.
- Remove the pot from heat and stir in the chopped spring onions.
- Serve the soup in bowls, garnished with fresh cilantro.
