Ingredients

  • Fresh scallops - 300 grams
  • Garlic cloves - 4, minced
  • Fresh ginger - 1 teaspoon, minced
  • Soy sauce (Halal) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Spring onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Coriander leaves - for garnish

Steps

  1. Rinse the scallops under cold water and pat them dry with a paper towel. Season with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the scallops and sear for 2-3 minutes on each side until golden brown. Remove scallops from the skillet and set aside.
  3. In the same skillet, add minced garlic and ginger. Sauté for about 30 seconds until fragrant, being careful not to burn them.
  4. Add soy sauce and sesame oil to the skillet, stirring well to combine with the garlic and ginger mixture.
  5. Return the scallops to the skillet and toss gently to coat them in the sauce. Cook for an additional 1-2 minutes until scallops are heated through.
