Ingredients

  • Scallops - 300 grams
  • Black bean sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Bell pepper - 1/2, sliced
  • Vegetable oil - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the scallops under cold water and pat them dry with a paper towel. Season with salt and black pepper.
  2. In a small bowl, mix the black bean sauce, cornstarch, and water to create a slurry. Set aside.
  3. Heat the vegetable oil in a non-stick pan over medium-high heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 30 seconds).
  4. Add the sliced bell pepper and green onions to the pan, stir-frying for 2-3 minutes until slightly softened.
  5. Push the vegetables to one side of the pan and add the scallops in a single layer. Sear for about 2-3 minutes on each side until they are golden brown and cooked through.
  6. Pour the black bean sauce mixture over the scallops and vegetables, stirring to coat everything evenly. Cook for an additional 1-2 minutes until the sauce thickens slightly.
  7. Drizzle with sesame oil before serving. Plate the scallops and vegetables, garnishing with additional green onions if desired.
