  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Spring onions - 2, chopped
  • Red chili - 1, sliced (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the scallops under cold water and pat them dry with paper towels. Season with salt and black pepper.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  3. Add the scallops to the skillet, cooking for about 2-3 minutes on each side until they are golden brown and opaque. Remove the scallops from the skillet and set them aside.
  4. In the same skillet, add soy sauce, oyster sauce, and sesame oil. Stir well to combine and bring to a simmer.
