Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Scallions - 4 stalks, finely chopped
  • Vegetable oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium pot, combine the rinsed rice and 300 ml of water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-18 minutes until the rice is cooked and water is absorbed.
  4. While the rice is cooking, heat the vegetable oil in a large skillet over medium heat.
  5. Add the finely chopped scallions to the skillet and sauté for 2-3 minutes until they are fragrant and slightly softened.
  6. When the rice is done, fluff it with a fork and add it to the skillet with the scallions.
  7. Pour in the soy sauce, sesame oil, salt, and black pepper. Stir gently to combine all the ingredients and heat through for another 2-3 minutes.
  8. Serve the scallion rice warm, garnished with additional chopped scallions if desired.
