Ingredients

  • Almond flour - 150 grams
  • Psyllium husk powder - 10 grams
  • Salt - 1 teaspoon
  • Boiling water - 120 milliliters
  • Scallions - 3, finely sliced
  • Sesame oil - 1 tablespoon
  • Olive oil - for frying

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk powder, and salt.
  2. Gradually pour in boiling water while stirring with a fork until a dough forms.
  3. Knead the dough for about 2 minutes until smooth and pliable.
  4. Cover the dough with a damp cloth and let it rest for 10 minutes.
  5. Divide the dough into two equal portions.
  6. On a floured surface, roll out one portion into a thin circle, about 20 cm in diameter.
  7. Brush the rolled-out dough with sesame oil and sprinkle half of the sliced scallions over it.
  8. Roll the dough tightly into a log, then coil the log into a spiral shape and flatten it gently.
  9. Heat a skillet over medium heat and add olive oil.
  10. Fry the pancake for about 3-4 minutes on each side, until golden brown and crispy.
  11. Repeat the process with the second portion of dough.
  12. Slice the pancakes into wedges and serve hot.
