- Almond flour - 150 grams
- Psyllium husk powder - 10 grams
- Salt - 1 teaspoon
- Boiling water - 120 milliliters
- Scallions - 3, finely sliced
- Sesame oil - 1 tablespoon
- Olive oil - for frying
Steps
- In a mixing bowl, combine almond flour, psyllium husk powder, and salt.
- Gradually pour in boiling water while stirring with a fork until a dough forms.
- Knead the dough for about 2 minutes until smooth and pliable.
- Cover the dough with a damp cloth and let it rest for 10 minutes.
- Divide the dough into two equal portions.
- On a floured surface, roll out one portion into a thin circle, about 20 cm in diameter.
- Brush the rolled-out dough with sesame oil and sprinkle half of the sliced scallions over it.
- Roll the dough tightly into a log, then coil the log into a spiral shape and flatten it gently.
- Heat a skillet over medium heat and add olive oil.
- Fry the pancake for about 3-4 minutes on each side, until golden brown and crispy.
- Repeat the process with the second portion of dough.
- Slice the pancakes into wedges and serve hot.
