Ingredients
- Scallions - 100 grams, finely chopped
- Almond flour - 100 grams
- Psyllium husk - 1 tablespoon
- Egg - 1 large
- Water - 100 ml
- Ground beef - 200 grams
- Garlic - 1 clove, minced
- Soy sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Sesame oil - 1 teaspoon
- Cooking oil - for frying
Steps
- In a mixing bowl, combine almond flour, psyllium husk, and a pinch of salt.
- Add the egg and water to the flour mixture, stirring until a dough forms. Let it sit for 5 minutes.
- Roll the dough into a thin circle, about 1/4 inch thick. Sprinkle half of the chopped scallions over the dough.
- Roll the dough tightly into a log and then coil it into a round shape. Flatten the coil gently with your hands.
- Heat a non-stick skillet over medium heat and add a drizzle of cooking oil. Fry the pancake for about 3-4 minutes on each side until golden brown and crispy. Remove and set aside.
- In a separate bowl, mix ground beef, minced garlic, soy sauce, salt, and pepper. Form into two burger patties.
- In the same skillet, add a bit more oil if needed and cook the burger patties for about 4-5 minutes on each side, or until cooked to your liking.
- To assemble, place a burger patty on top of the scallion pancake and drizzle with sesame oil. Top with remaining scallions if desired.
