  • Boiling water - 120 milliliters
  • Salt - 1/2 teaspoon
  • Scallions - 4, finely chopped
  • Sesame oil - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Soy sauce - 1 tablespoon, for serving
  • Chili oil - optional, for serving

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Gradually add boiling water while stirring with chopsticks or a fork until a shaggy dough forms.
  2. Allow the dough to cool slightly, then knead it on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  3. Divide the dough into two equal portions. Roll out one portion into a thin circle (about 20 cm in diameter) on a floured surface.
  4. Brush the rolled-out dough with sesame oil, sprinkle half of the chopped scallions evenly over it, and then roll it up tightly into a log.
  5. Twist the log into a spiral shape and tuck the end underneath. Flatten gently with your palm, then roll out again into a thicker pancake (about 1 cm).
  6. Repeat the process with the second portion of dough.
  7. Preheat your oven to 200°C (400°F).
  8. Heat vegetable oil in an oven-safe skillet over medium heat. Add the first pancake and cook for about 3-4 minutes on each side until golden brown.
  9. Transfer the skillet to the preheated oven and bake the pancake for an additional 10 minutes until crispy.
  10. Remove from the oven, slice into wedges, and serve hot with soy sauce and chili oil if desired.
