- Scallions - 4, finely chopped
- Sesame oil - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Soy sauce - 1 tablespoon, for serving
- Chili oil - optional, for serving
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add boiling water while stirring with chopsticks or a fork until a shaggy dough forms.
- Allow the dough to cool slightly, then knead it on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- Divide the dough into two equal portions. Roll out one portion into a thin circle (about 20 cm in diameter) on a floured surface.
- Brush the rolled-out dough with sesame oil, sprinkle half of the chopped scallions evenly over it, and then roll it up tightly into a log.
- Twist the log into a spiral shape and tuck the end underneath. Flatten gently with your palm, then roll out again into a thicker pancake (about 1 cm).
- Repeat the process with the second portion of dough.
- Preheat your oven to 200°C (400°F).
- Heat vegetable oil in an oven-safe skillet over medium heat. Add the first pancake and cook for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake the pancake for an additional 10 minutes until crispy.
- Remove from the oven, slice into wedges, and serve hot with soy sauce and chili oil if desired.
