- Fresh scallions - 100 grams
- Vegetable oil - 4 tablespoons
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Noodles (e.g., wheat or rice noodles) - 200 grams
- Salt - to taste
- Black pepper - to taste
- Chili flakes (optional) - 1 teaspoon
Steps
- Chop the scallions into small pieces, separating the green parts from the white parts.
- In a small saucepan, heat the vegetable oil over medium heat. Add the white parts of the scallions, minced garlic, and grated ginger to the oil, and sauté for about 2-3 minutes until fragrant but not browned.
- Remove the saucepan from the heat and add the sesame oil, soy sauce, and black pepper. Stir well and set aside.
- Bring a pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente, usually around 4-6 minutes.
- Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
- In a large mixing bowl, combine the drained noodles with the scallion oil mixture. Toss well to coat all the noodles evenly.
- Add the green parts of the scallions and chili flakes (if using) to the noodles. Toss again and taste for seasoning, adjusting with more salt or soy sauce if needed.
