Ingredients

  • Fresh scallions - 100 grams
  • Vegetable oil - 4 tablespoons
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Noodles (e.g., wheat or rice noodles) - 200 grams
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes (optional) - 1 teaspoon

Steps

  1. Chop the scallions into small pieces, separating the green parts from the white parts.
  2. In a small saucepan, heat the vegetable oil over medium heat. Add the white parts of the scallions, minced garlic, and grated ginger to the oil, and sauté for about 2-3 minutes until fragrant but not browned.
  3. Remove the saucepan from the heat and add the sesame oil, soy sauce, and black pepper. Stir well and set aside.
  4. Bring a pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente, usually around 4-6 minutes.
  5. Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
  6. In a large mixing bowl, combine the drained noodles with the scallion oil mixture. Toss well to coat all the noodles evenly.
