Ingredients
- Daikon turnip - 300 grams, grated
- Rice flour - 100 grams
- Tapioca starch - 50 grams
- Water - 200 ml
- Salt - 1/2 teaspoon
- White pepper - 1/4 teaspoon
- Green onion - 2 tablespoons, chopped
- Mushrooms (shiitake or any) - 50 grams, finely chopped
- Cooking oil - for frying
Steps
- Grate the daikon turnip and place it in a bowl. Sprinkle with salt and let it sit for 10 minutes to release excess moisture.
- In a separate bowl, combine the rice flour, tapioca starch, white pepper, and water. Mix until smooth to form a batter.
- After 10 minutes, squeeze the grated turnip to remove extra moisture and add it to the batter along with the chopped green onions and mushrooms. Mix well to combine.
- Transfer the mixture into a lightly greased 20 cm (8 inch) round steam-proof dish.
- Prepare a steamer and steam the cake over medium heat for 25-30 minutes or until firm and a toothpick comes out clean.
- Once steamed, let the cake cool for about 10 minutes, then cut it into squares.
- Heat a non-stick frying pan over medium heat and add a little cooking oil. Fry the squares until golden brown and crispy on both sides.
- Serve hot, optionally with soy sauce or chili oil for dipping.
