Ingredients
- Sweet potato - 250 grams, peeled and cubed
- Coconut flour - 30 grams
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Egg - 1 large
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - for frying
Steps
- Steam the sweet potato cubes in a pot for about 15 minutes or until tender, then drain and let cool slightly.
- In a mixing bowl, mash the steamed sweet potato until smooth.
- Add the coconut flour, green onion, garlic, ginger, egg, sesame oil, salt, and black pepper to the mashed sweet potato. Mix until well combined.
- Form the mixture into small cakes, about 5 cm in diameter and 1 cm thick.
- Heat coconut oil in a frying pan over medium heat. Once hot, add the sweet potato cakes to the pan.
- Fry the cakes for about 4-5 minutes on each side or until golden brown and crispy.
- Remove the cakes from the pan and place them on a paper towel to absorb excess oil before serving.
