Ingredients

  • Sweet potato - 250 grams, peeled and cubed
  • Coconut flour - 30 grams
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Egg - 1 large
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - for frying

Steps

  1. Steam the sweet potato cubes in a pot for about 15 minutes or until tender, then drain and let cool slightly.
  2. In a mixing bowl, mash the steamed sweet potato until smooth.
  3. Add the coconut flour, green onion, garlic, ginger, egg, sesame oil, salt, and black pepper to the mashed sweet potato. Mix until well combined.
  4. Form the mixture into small cakes, about 5 cm in diameter and 1 cm thick.
  5. Heat coconut oil in a frying pan over medium heat. Once hot, add the sweet potato cakes to the pan.
  6. Fry the cakes for about 4-5 minutes on each side or until golden brown and crispy.
  7. Remove the cakes from the pan and place them on a paper towel to absorb excess oil before serving.
