- Spring onions, chopped - 2 tablespoons
- Soy sauce - 1 tablespoon
- Salt - 1/4 teaspoon
- White pepper - 1/4 teaspoon
- Tofu, soft - 100 grams
- Mushrooms, sliced (shiitake or any preferred) - 50 grams
- Cilantro, chopped - 2 tablespoons
- Chili oil (optional) - 1 teaspoon
Steps
- In a saucepan, heat the fresh soy milk over medium heat until warm, stirring occasionally to prevent it from sticking.
- Add the grated ginger, soy sauce, salt, and white pepper to the warm soy milk, stirring well to combine.
- In a separate pan, heat the sesame oil over medium heat. Add the sliced mushrooms and sauté for about 3-4 minutes until tender.
- Add the soft tofu to the pan with mushrooms and gently break it up with a spatula, cooking for an additional 2 minutes.
- Once the soy milk is heated through, pour it into bowls and top each serving with the sautéed mushrooms and tofu mixture.
- Garnish with chopped spring onions and cilantro. Drizzle with chili oil if desired for an extra kick.
