  • Boiling water - 120 milliliters
  • Salt - 1/2 teaspoon
  • Scallions (green onions) - 100 grams, finely chopped
  • Vegetable oil - 3 tablespoons, plus more for frying
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Gradually pour in the boiling water while mixing with chopsticks or a fork until a shaggy dough forms.
  2. Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for 15 minutes.
  3. After resting, divide the dough into two equal pieces. Roll each piece into a thin circle, about 20 cm in diameter.
  4. Brush each rolled circle with vegetable oil, then sprinkle an even layer of chopped scallions, sesame oil, and black pepper over the surface.
  5. Starting from one edge, roll the dough tightly into a log, then coil the log into a spiral shape. Flatten the spiral gently with your palm and roll it out again into a circle about 1 cm thick.
  6. Heat a non-stick frying pan over medium heat and add a tablespoon of vegetable oil. Fry the pancake for about 3-4 minutes on each side or until golden brown and crispy. Repeat with the second pancake.
  7. Once cooked, remove from the pan and let drain on paper towels. Serve warm, sliced into wedges.
