- Boiling water - 120 milliliters

- Scallions (green onions) - 100 grams, finely chopped
- Vegetable oil - 3 tablespoons, plus more for frying
- Sesame oil - 1 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually pour in the boiling water while mixing with chopsticks or a fork until a shaggy dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for 15 minutes.
- After resting, divide the dough into two equal pieces. Roll each piece into a thin circle, about 20 cm in diameter.
- Brush each rolled circle with vegetable oil, then sprinkle an even layer of chopped scallions, sesame oil, and black pepper over the surface.
- Starting from one edge, roll the dough tightly into a log, then coil the log into a spiral shape. Flatten the spiral gently with your palm and roll it out again into a circle about 1 cm thick.
- Heat a non-stick frying pan over medium heat and add a tablespoon of vegetable oil. Fry the pancake for about 3-4 minutes on each side or until golden brown and crispy. Repeat with the second pancake.
- Once cooked, remove from the pan and let drain on paper towels. Serve warm, sliced into wedges.
