Steps
- Prepare all the vegetables and chicken by cutting them into thin strips and shredding the chicken breast if not already done.
- In a bowl, combine the cooked jasmine rice with shredded carrots, sliced cucumbers, sliced bell peppers, chopped green onions, chopped cilantro, and shredded chicken.
- In another small bowl, mix soy sauce, sesame oil, lime juice, and chili sauce to create the dipping sauce.
- Soak a rice paper wrapper in warm water for about 10-15 seconds until it becomes soft and pliable.
- Lay the softened rice paper on a clean, flat surface and place a small amount of the filling mixture near the bottom edge of the wrapper.
- Fold the bottom edge of the wrapper over the filling, then fold in the sides and roll it up tightly to enclose the filling.
- Repeat the process with the remaining wrappers and filling mixture.
- Serve the savory rice rolls with the dipping sauce on the side.
