Ingredients

  • Rice paper wrappers - 8 sheets
  • Cooked jasmine rice - 200 grams
  • Shredded carrots - 50 grams
  • Sliced cucumbers - 50 grams
  • Sliced bell peppers (red or yellow) - 50 grams
  • Chopped green onions - 30 grams
  • Chopped cilantro - 15 grams
  • Cooked chicken breast (shredded) - 100 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Chili sauce - 1 teaspoon (optional)

Steps

  1. Prepare all the vegetables and chicken by cutting them into thin strips and shredding the chicken breast if not already done.
  2. In a bowl, combine the cooked jasmine rice with shredded carrots, sliced cucumbers, sliced bell peppers, chopped green onions, chopped cilantro, and shredded chicken.
  3. In another small bowl, mix soy sauce, sesame oil, lime juice, and chili sauce to create the dipping sauce.
  4. Soak a rice paper wrapper in warm water for about 10-15 seconds until it becomes soft and pliable.
  5. Lay the softened rice paper on a clean, flat surface and place a small amount of the filling mixture near the bottom edge of the wrapper.
  6. Fold the bottom edge of the wrapper over the filling, then fold in the sides and roll it up tightly to enclose the filling.
  7. Repeat the process with the remaining wrappers and filling mixture.
  8. Serve the savory rice rolls with the dipping sauce on the side.
