- Jasmine rice - 100 grams
- Water - 500 ml
- Coconut milk - 200 ml
- Mushrooms (shiitake or button) - 100 grams, diced
- Green onions - 2, finely sliced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for about 15 minutes or until the water is absorbed.
- In a separate pan, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
- Add the diced mushrooms to the pan and cook for about 5 minutes until softened.
- Stir in the cooked rice, coconut milk, soy sauce, and half of the green onions. Mix well and cook for an additional 5-7 minutes until heated through and creamy.
- Season with salt and black pepper to taste.
- Serve the savory rice pudding hot, garnished with the remaining green onions.
