Ingredients

  • Jasmine rice - 100 grams
  • Water - 500 ml
  • Coconut milk - 200 ml
  • Mushrooms (shiitake or button) - 100 grams, diced
  • Green onions - 2, finely sliced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for about 15 minutes or until the water is absorbed.
  3. In a separate pan, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
  4. Add the diced mushrooms to the pan and cook for about 5 minutes until softened.
  5. Stir in the cooked rice, coconut milk, soy sauce, and half of the green onions. Mix well and cook for an additional 5-7 minutes until heated through and creamy.
  6. Season with salt and black pepper to taste.
  7. Serve the savory rice pudding hot, garnished with the remaining green onions.
