- Rice noodle sheets - 4 sheets
- Shiitake mushrooms - 50 grams, sliced
- Carrot - 1 medium, julienned
- Spinach - 50 grams, chopped
- Egg - 1 large, beaten
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Spring onion - 1, finely chopped
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
Steps
- Soak the rice noodle sheets in warm water for about 10 minutes until soft, then drain and set aside.
- In a pan, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
- Add sliced shiitake mushrooms and julienned carrot to the pan. Cook for 3-4 minutes until the vegetables are tender.
- Stir in the chopped spinach and beaten egg, and cook until the egg is fully set, about 2-3 minutes. Season with soy sauce, salt, and black pepper.
- Lay out a rice noodle sheet on a clean surface. Place a spoonful of the vegetable and egg mixture at one end and roll it up tightly, tucking in the sides as you go. Repeat with remaining noodle sheets and filling.
- In a steamer, place the rolls seam side down and steam for 5-7 minutes until heated through.
- Serve the rolls garnished with chopped cilantro and extra soy sauce for dipping.
