Ingredients

  • Rice noodles - 200 grams
  • Eggs - 2 large
  • Cooked chicken breast, shredded - 100 grams
  • Chopped green onions - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Vegetable oil - for cooking

Steps

  1. Soak the rice noodles in warm water for about 20 minutes or until softened, then drain and set aside.
  2. In a bowl, beat the eggs and season with salt and pepper.
  3. Heat a non-stick skillet over medium heat and add a little vegetable oil.
  4. Pour a thin layer of the beaten eggs into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until set, then carefully flip and cook for another minute.
  5. Transfer the cooked egg onto a plate and repeat until all the egg mixture is cooked, making about 2-3 egg sheets.
  6. In the same skillet, add a bit more vegetable oil, then add the drained rice noodles, shredded chicken, chopped green onions, soy sauce, and sesame oil. Stir-fry for 2-3 minutes until heated through.
  7. Lay an egg sheet flat, place a portion of the noodle mixture on one edge, and roll it tightly. Repeat with the remaining ingredients.
  8. Cut the rolls into bite-sized pieces and serve warm, drizzled with extra soy sauce if desired.
