Ingredients

  • Jasmine rice - 1 cup
  • Pumpkin (cubed) - 200 grams
  • Carrot (diced) - 50 grams
  • Green bell pepper (diced) - 50 grams
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 2 cups
  • Green onions (sliced) - 2 stalks
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium pot, heat the vegetable broth over medium heat. Add the rinsed rice and bring it to a boil.
  3. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and all the liquid is absorbed.
  4. While the rice is cooking, heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.
  5. Add the cubed pumpkin, diced carrot, and green bell pepper to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
  6. Once the vegetables are cooked, add the soy sauce, salt, and black pepper, mixing well to combine.
  7. Fluff the cooked rice with a fork and then add it to the skillet with the vegetables. Stir well to combine all ingredients evenly.
