Ingredients

  • All-purpose flour - 150 grams
  • Salt - 1/2 teaspoon
  • Unsalted butter - 75 grams (cold, cubed)
  • Ice water - 3 tablespoons
  • Pumpkin puree - 200 grams
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Green onion (finely chopped) - 2 tablespoons
  • Five spice powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cornstarch - 1 tablespoon
  • Egg - 1 (beaten, for egg wash)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until the dough holds together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat the oven to 180°C (350°F).
  4. In another bowl, mix the pumpkin puree, soy sauce, sesame oil, grated ginger, minced garlic, green onion, five spice powder, black pepper, and cornstarch until well combined.
  5. Roll out the chilled dough on a floured surface to fit a 20 cm pie dish. Place the dough in the dish and trim the edges.
  6. Pour the pumpkin filling into the prepared crust, smoothing the top with a spatula.
  7. Brush the edges of the pie crust with the beaten egg.
  8. Bake in the preheated oven for 30-35 minutes, or until the crust is golden and the filling is set.
  9. Remove from the oven and let cool for 10 minutes before slicing and serving.
