Ingredients

  • Pumpkin puree - 200 grams
  • Almond flour - 100 grams
  • Green onions - 2 stalks, finely chopped
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 2 tablespoons
  • Egg - 1 large
  • Black sesame seeds - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - for frying

Steps

  1. In a mixing bowl, combine the pumpkin puree, almond flour, chopped green onions, minced garlic, grated ginger, coconut aminos, and egg. Mix until well combined.
  2. Add the salt, black pepper, and black sesame seeds to the mixture. Stir until all ingredients are evenly incorporated.
  3. Heat a non-stick skillet over medium heat and add a tablespoon of coconut oil.
  4. Once the oil is hot, scoop about 2 tablespoons of the pumpkin mixture and flatten it into a patty shape in the skillet. Repeat for the remaining mixture, ensuring not to overcrowd the pan.
  5. Cook each cake for about 3-4 minutes on one side, or until golden brown, then flip and cook for an additional 3-4 minutes on the other side.
  6. Once cooked, remove the cakes from the skillet and place them on a paper towel to absorb excess oil. Serve warm.
