- Mung beans - 100 grams
- Water - 250 ml (for soaking)
- Water - 100 ml (for batter)
- Rice flour - 50 grams
- Cornstarch - 20 grams
- Green onions - 2 stalks, finely chopped
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for greasing the baking dish
Steps
- Rinse the mung beans under cold water and soak them in 250 ml of water for at least 4 hours or overnight.
- After soaking, drain the mung beans and place them in a steamer basket lined with cheesecloth or parchment paper.
- Steam the mung beans for about 20 minutes, or until they are soft and cooked through. Remove from the steamer and let cool slightly.
- In a mixing bowl, mash the steamed mung beans until smooth. Add the rice flour, cornstarch, 100 ml of water, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined to form a batter.
- Preheat the oven to 180°C (350°F) and grease a small baking dish with vegetable oil.
- Pour the mung bean batter into the greased baking dish and spread it evenly.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the edges pull away from the sides of the dish.
- Remove from the oven and let cool for a few minutes before slicing into squares. Serve warm or at room temperature.
