- White pepper - 1/4 teaspoon
- Chopped green onions - 2 tablespoons
- Chopped shiitake mushrooms - 30 grams
- Fresh cilantro - for garnish
Steps
- In a mixing bowl, whisk together the eggs, chicken broth, soy sauce, sesame oil, salt, and white pepper until smooth.
- Strain the mixture through a fine sieve into another bowl to ensure a silky texture.
- Add the chopped shiitake mushrooms and half of the green onions to the strained egg mixture.
- Prepare a steamer or a pot with a steaming rack, and fill it with water. Bring the water to a gentle simmer.
- Pour the egg mixture into two small heatproof bowls or ramekins, leaving some space at the top.
- Place the bowls in the steamer and cover with a lid. Steam for about 10-12 minutes, or until the custard is just set but still slightly jiggly in the center.
