Ingredients

  • Eggs - 3 large
  • Chicken broth - 200 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/4 teaspoon
  • White pepper - 1/4 teaspoon
  • Chopped green onions - 2 tablespoons
  • Chopped shiitake mushrooms - 30 grams
  • Fresh cilantro - for garnish

Steps

  1. In a mixing bowl, whisk together the eggs, chicken broth, soy sauce, sesame oil, salt, and white pepper until smooth.
  2. Strain the mixture through a fine sieve into another bowl to ensure a silky texture.
  3. Add the chopped shiitake mushrooms and half of the green onions to the strained egg mixture.
  4. Prepare a steamer or a pot with a steaming rack, and fill it with water. Bring the water to a gentle simmer.
  5. Pour the egg mixture into two small heatproof bowls or ramekins, leaving some space at the top.
  6. Place the bowls in the steamer and cover with a lid. Steam for about 10-12 minutes, or until the custard is just set but still slightly jiggly in the center.
  7. Carefully remove the bowls from the steamer and let them cool for a couple of minutes.
  8. Garnish with the remaining chopped green onions and fresh cilantro before serving.
