Ingredients

  • All-purpose flour - 100 grams
  • Water - 250 milliliters
  • Salt - 1/2 teaspoon
  • Chopped scallions - 50 grams
  • Grated carrot - 50 grams
  • Chopped mushrooms - 50 grams
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cooking oil - for frying

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt, and gradually add water while whisking until you have a smooth batter.
  2. Let the batter rest for 10 minutes to achieve the right consistency.
  3. In a separate bowl, mix the chopped scallions, grated carrot, chopped mushrooms, soy sauce, and sesame oil to prepare the filling.
  4. Heat a non-stick skillet over medium heat and add a little cooking oil.
  5. Pour a ladleful of batter into the skillet, swirling to form a thin layer. Cook for 2-3 minutes until the edges lift and the bottom is lightly golden.
  6. Flip the crepe and add a portion of the filling to one half. Cook for another minute until the filling is heated through.
  7. Fold the crepe over the filling and slide it onto a plate. Repeat the process with the remaining batter and filling.
  8. Serve warm, optionally with additional soy sauce for dipping.
