- All-purpose flour - 100 grams
- Water - 250 milliliters
- Salt - 1/2 teaspoon
- Chopped scallions - 50 grams
- Grated carrot - 50 grams
- Chopped mushrooms - 50 grams
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Cooking oil - for frying
Steps
- In a mixing bowl, combine the all-purpose flour and salt, and gradually add water while whisking until you have a smooth batter.
- Let the batter rest for 10 minutes to achieve the right consistency.
- In a separate bowl, mix the chopped scallions, grated carrot, chopped mushrooms, soy sauce, and sesame oil to prepare the filling.
- Heat a non-stick skillet over medium heat and add a little cooking oil.
- Pour a ladleful of batter into the skillet, swirling to form a thin layer. Cook for 2-3 minutes until the edges lift and the bottom is lightly golden.
- Flip the crepe and add a portion of the filling to one half. Cook for another minute until the filling is heated through.
- Fold the crepe over the filling and slide it onto a plate. Repeat the process with the remaining batter and filling.
- Serve warm, optionally with additional soy sauce for dipping.
