- chicken broth - 200 ml
- soy sauce - 1 tablespoon
- sesame oil - 1 teaspoon
- green onions - 2 stalks, finely chopped
- mushrooms (shiitake or button) - 50 grams, finely chopped
- spinach - 30 grams, chopped
- white pepper - 1/4 teaspoon
- salt - 1/4 teaspoon
- cooked chicken breast - 100 grams, shredded (optional)
- water - 200 ml for steaming
Steps
- Preheat the oven to 160°C (320°F).
- In a mixing bowl, whisk together the eggs, chicken broth, soy sauce, sesame oil, white pepper, and salt until well combined.
- Fold in the chopped green onions, mushrooms, spinach, and shredded chicken (if using).
- Strain the egg mixture through a fine sieve into another bowl to ensure a smooth custard.
- Pour the mixture into two small heatproof ramekins.
- Place the ramekins in a baking dish and add water to the dish until it reaches halfway up the sides of the ramekins for a water bath.
- Cover the baking dish with aluminum foil to prevent excess moisture from entering.
- Bake in the preheated oven for about 30 minutes, or until the custard is set but still slightly jiggly in the center.
- Remove from the oven and let cool slightly before serving.
