Ingredients

  • large eggs - 3
  • chicken broth - 200 ml
  • soy sauce - 1 tablespoon
  • sesame oil - 1 teaspoon
  • green onions - 2 stalks, finely chopped
  • mushrooms (shiitake or button) - 50 grams, finely chopped
  • spinach - 30 grams, chopped
  • white pepper - 1/4 teaspoon
  • salt - 1/4 teaspoon
  • cooked chicken breast - 100 grams, shredded (optional)
  • water - 200 ml for steaming

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a mixing bowl, whisk together the eggs, chicken broth, soy sauce, sesame oil, white pepper, and salt until well combined.
  3. Fold in the chopped green onions, mushrooms, spinach, and shredded chicken (if using).
  4. Strain the egg mixture through a fine sieve into another bowl to ensure a smooth custard.
  5. Pour the mixture into two small heatproof ramekins.
  6. Place the ramekins in a baking dish and add water to the dish until it reaches halfway up the sides of the ramekins for a water bath.
  7. Cover the baking dish with aluminum foil to prevent excess moisture from entering.
  8. Bake in the preheated oven for about 30 minutes, or until the custard is set but still slightly jiggly in the center.
  9. Remove from the oven and let cool slightly before serving.
