Ingredients

  • Whole wheat flour - 200 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Shredded cabbage - 100 grams
  • Shredded carrots - 50 grams
  • Chopped green onions - 30 grams
  • Cooked lean ground chicken or turkey - 100 grams
  • Sesame oil - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Ginger (grated) - 1 teaspoon
  • Garlic (minced) - 1 clove

Steps

  1. In a bowl, mix warm water and active dry yeast; let it sit for 5 minutes until frothy.
  2. In another bowl, combine whole wheat flour and salt, then add the yeast mixture and olive oil. Knead until smooth and elastic, about 10 minutes.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes, or until doubled in size.
  4. In a skillet, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute.
  5. Add shredded cabbage, carrots, green onions, and cooked ground chicken or turkey to the skillet; stir-fry for 5-7 minutes. Drizzle with soy sauce and mix well. Remove from heat and let cool.
  6. Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a ball and flatten it into a disc.
  7. Place a spoonful of the filling mixture in the center of each disc and fold the edges over to seal the bun. Pinch to secure the filling inside.
  8. Place the buns on a baking tray lined with parchment paper. Let them rest for 15 minutes.
  9. Preheat the oven to 180°C (350°F). Bake the buns for 20-25 minutes or until golden brown.
  10. Remove from oven, let cool slightly, and serve warm.
