Ingredients

  • Squid (cleaned and cut into rings) - 300 grams
  • Cornstarch - 100 grams
  • All-purpose flour - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Five-spice powder - 1/2 teaspoon
  • Garlic (minced) - 2 cloves
  • Spring onions (finely chopped) - 2 tablespoons
  • Chili flakes - 1/2 teaspoon
  • Vegetable oil (for frying) - 500 ml
  • Lemon wedges (for serving) - 2

Steps

  1. In a mixing bowl, combine cornstarch, all-purpose flour, salt, black pepper, and five-spice powder.
  2. Add the cleaned squid rings to the bowl and toss to coat them evenly with the flour mixture.
  3. Heat the vegetable oil in a deep pan or wok over medium-high heat until it reaches 180°C (350°F).
  4. Carefully add the coated squid rings to the hot oil in batches, frying for about 2-3 minutes or until golden and crispy.
  5. Use a slotted spoon to remove the squid from the oil and drain on paper towels.
  6. In a separate pan, sauté minced garlic and chili flakes in a little oil until fragrant, then toss the fried squid with this mixture and add chopped spring onions.
  7. Serve immediately with lemon wedges on the side for squeezing over the squid.
