Ingredients
- Live crab - 500 grams
- Cornstarch - 100 grams
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Garlic - 4 cloves, minced
- Ginger - 1 inch, minced
- Green onions - 2, chopped
- Red chili - 1, sliced (optional)
- Vegetable oil - 200 ml for frying
Steps
- 1. Begin by cleaning the live crab under cold running water, then steam it for 10 minutes until it turns bright orange. Allow it to cool, then crack the crab into halves and remove the gills and innards.
- 2. In a bowl, mix the cornstarch, salt, and black pepper. Dredge the crab pieces in this mixture until evenly coated.
- 3. Heat the vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the coated crab pieces in batches. Fry for about 4-5 minutes each until they are golden brown and crispy.
- 4. Once fried, remove the crab pieces and drain on paper towels to remove excess oil.
- 5. In a separate pan, add a little oil and sauté the minced garlic, ginger, and sliced red chili until fragrant.
- 6. Add the fried crab to the pan, tossing well to coat with the garlic and ginger mixture. Add the chopped green onions and stir-fry for another minute.
- 7. Serve hot, garnished with additional green onions if desired.
