Ingredients
- Ground lamb or beef - 250 grams
- Cumin powder - 1 teaspoon
- Sichuan peppercorns - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Green onions - 2, chopped
- Flour - 200 grams
- Water - 100 ml
- Baking powder - 1/2 teaspoon
- Vegetable oil - for frying
Steps
- In a bowl, mix the flour, baking powder, and a pinch of salt. Gradually add water and knead until you form a smooth dough. Cover and let it rest for 30 minutes.
- In a pan, heat the sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
- Add the ground lamb or beef, cumin, Sichuan peppercorns, soy sauce, salt, and black pepper. Cook until the meat is browned and fully cooked, about 5-7 minutes. Stir in the chopped green onions and set aside.
- Divide the dough into 4 equal balls. Roll each ball into a thin circle, about 15 cm in diameter.
- Place a portion of the meat filling in the center of each circle. Fold the dough over to create a half-moon shape, sealing the edges tightly.
- Heat vegetable oil in a frying pan over medium heat. Fry each filled dough for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the pan and let cool slightly before serving. Enjoy your Roujiamo warm!
