Ingredients

  • Ground lamb or beef - 250 grams
  • Cumin powder - 1 teaspoon
  • Sichuan peppercorns - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 2, chopped
  • Flour - 200 grams
  • Water - 100 ml
  • Baking powder - 1/2 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a bowl, mix the flour, baking powder, and a pinch of salt. Gradually add water and knead until you form a smooth dough. Cover and let it rest for 30 minutes.
  2. In a pan, heat the sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
  3. Add the ground lamb or beef, cumin, Sichuan peppercorns, soy sauce, salt, and black pepper. Cook until the meat is browned and fully cooked, about 5-7 minutes. Stir in the chopped green onions and set aside.
  4. Divide the dough into 4 equal balls. Roll each ball into a thin circle, about 15 cm in diameter.
  5. Place a portion of the meat filling in the center of each circle. Fold the dough over to create a half-moon shape, sealing the edges tightly.
  6. Heat vegetable oil in a frying pan over medium heat. Fry each filled dough for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove from the pan and let cool slightly before serving. Enjoy your Roujiamo warm!
