Rice with Tofu

Ingredients

  • Jasmine rice - 150 grams
  • Firm tofu - 200 grams
  • Bell pepper (red) - 1 medium, diced
  • Broccoli florets - 100 grams
  • Carrot - 1 medium, julienned
  • Soy sauce - 30 ml (ensure it's Halal)
  • Sesame oil - 10 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, sliced
  • Vegetable oil - 15 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions, usually with 300 ml of water.
  2. While the rice is cooking, press the tofu to remove excess moisture, then cut it into cubes.
  3. Heat vegetable oil in a large pan over medium heat. Once hot, add the tofu cubes and sauté until golden brown on all sides, about 8-10 minutes. Remove from the pan and set aside.
  4. In the same pan, add the minced garlic and ginger, sautéing for 1 minute until fragrant.
  5. Add the diced bell pepper, broccoli florets, and julienned carrot to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
  6. Return the tofu to the pan, then add the soy sauce, sesame oil, salt, and black pepper. Stir well to combine all the ingredients and heat through for another 2-3 minutes.
  7. Once the rice is cooked, fluff it with a fork and serve it on plates topped with the tofu and vegetable mixture.
  8. Garnish with sliced green onions before serving.
