Rice with Tofu

Ingredients
- Jasmine rice - 150 grams
- Firm tofu - 200 grams
- Bell pepper (red) - 1 medium, diced
- Broccoli florets - 100 grams
- Carrot - 1 medium, julienned
- Soy sauce - 30 ml (ensure it's Halal)
- Sesame oil - 10 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2, sliced
- Vegetable oil - 15 ml
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions, usually with 300 ml of water.
- While the rice is cooking, press the tofu to remove excess moisture, then cut it into cubes.
- Heat vegetable oil in a large pan over medium heat. Once hot, add the tofu cubes and sauté until golden brown on all sides, about 8-10 minutes. Remove from the pan and set aside.
- In the same pan, add the minced garlic and ginger, sautéing for 1 minute until fragrant.
- Add the diced bell pepper, broccoli florets, and julienned carrot to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Return the tofu to the pan, then add the soy sauce, sesame oil, salt, and black pepper. Stir well to combine all the ingredients and heat through for another 2-3 minutes.
- Once the rice is cooked, fluff it with a fork and serve it on plates topped with the tofu and vegetable mixture.
- Garnish with sliced green onions before serving.
