  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  3. While the rice cooks, heat vegetable oil in a large skillet over medium heat. Add minced garlic and ginger, sautéing for 1-2 minutes until fragrant.
  4. Add the sliced shiitake mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender.
  5. Stir in the soy sauce, sesame oil, salt, and black pepper, mixing well to combine with the mushrooms.
  6. Fluff the cooked rice with a fork and add it to the skillet with the mushroom mixture. Stir gently to combine all ingredients.
  7. Finally, garnish with chopped green onions before serving.
