Ingredients

  • Jasmine rice - 100 grams
  • Water - 1 liter
  • Fresh fish fillet (e.g., cod or tilapia) - 150 grams
  • Ginger - 10 grams, sliced
  • Spring onions - 2 stalks, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • White pepper - to taste
  • Chopped cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice and 1 liter of water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low and add the sliced ginger. Simmer uncovered for about 20 minutes, stirring occasionally, until the rice is soft and the porridge has thickened.
  4. While the porridge is cooking, prepare the fish by cutting it into bite-sized pieces and seasoning lightly with salt and white pepper.
  5. In a separate pan, heat the sesame oil over medium heat. Add the fish pieces and cook for about 3-4 minutes or until the fish is opaque and cooked through, flipping halfway.
  6. Remove the ginger slices from the porridge and stir in the soy sauce and half of the chopped spring onions.
  7. Divide the porridge into two bowls, top with the cooked fish, and garnish with the remaining spring onions and chopped cilantro.
