Ingredients

  • Rice paper wrappers - 4 sheets
  • Cooked shrimp - 100 grams, halved lengthwise
  • Carrot - 1 medium, julienned
  • Cucumber - 1/2 medium, julienned
  • Red bell pepper - 1/2 medium, julienned
  • Fresh mint leaves - 10 leaves
  • Fresh cilantro - 10 sprigs
  • Lettuce leaves - 2 large, torn into pieces
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili sauce - 1 teaspoon (optional)

Steps

  1. Prepare all the filling ingredients by washing and cutting the vegetables into thin strips and halving the shrimp.
  2. Fill a large bowl with warm water and soak one rice paper wrapper for about 10-15 seconds until it becomes soft and pliable.
  3. Lay the softened rice paper on a clean surface and place a piece of lettuce in the center, followed by a few pieces of shrimp, carrot, cucumber, red bell pepper, mint, and cilantro.
  4. Fold the sides of the rice paper over the filling, then roll the wrapper tightly from the bottom up to enclose the filling completely.
  5. Repeat the process with the remaining rice paper wrappers and filling ingredients.
  6. In a small bowl, mix together soy sauce, lime juice, and chili sauce to create the dipping sauce.
  7. Serve the rice paper rolls on a plate with the dipping sauce on the side.
