Ingredients

  • Rice noodles - 100 grams
  • Chicken broth - 500 ml
  • Water - 250 ml
  • Egg - 1 large
  • Green onions - 2 stalks, chopped
  • Ginger - 1 teaspoon, minced
  • Garlic - 1 clove, minced
  • Soy sauce (gluten-free) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Bring the chicken broth and water to a boil in a medium pot.
  2. Add the rice noodles and cook according to package instructions, usually about 3-5 minutes.
  3. In a separate small pan, heat the sesame oil over medium heat and sauté the minced ginger and garlic until fragrant, about 1-2 minutes.
  4. Add the sautéed ginger and garlic to the pot with the noodles.
  5. Crack the egg into the broth and stir gently to create ribbons of egg as it cooks, about 1-2 minutes.
  6. Stir in the gluten-free soy sauce, and season with salt and pepper to taste.
  7. Remove from heat and serve the soup in bowls, garnished with chopped green onions and fresh cilantro.
