  • Diced bell peppers - 50 grams
  • Sliced mushrooms - 50 grams
  • Chopped green onions - 2 tablespoons
  • Cooked chicken or tofu - 100 grams
  • Szechuan peppercorns - 1/2 teaspoon (optional)
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine rice flour, tapioca starch, salt, and baking powder.
  3. Gradually add water and olive oil, stirring until a smooth dough forms.
  4. Knead the dough lightly on a floured surface until it becomes pliable.
  5. Roll the dough into a circle about 1 cm thick and place it on a baking tray lined with parchment paper.
  6. Brush the surface of the dough with soy sauce evenly.
  7. Evenly distribute the shredded mozzarella cheese on top of the dough.
  8. Add the diced bell peppers, sliced mushrooms, chopped green onions, and cooked chicken or tofu over the cheese.
  9. Sprinkle Szechuan peppercorns and chili flakes if desired.
