Ingredients

  • Glutinous rice flour - 100 grams
  • Water - 150 milliliters
  • Red bean paste (unsweetened) - 80 grams
  • Erythritol (or preferred low-carb sweetener) - 20 grams
  • Salt - 1/4 teaspoon
  • Coconut oil (for greasing) - 1 teaspoon

Steps

  1. In a mixing bowl, combine the glutinous rice flour, erythritol, and salt.
  2. Gradually add water to the flour mixture, stirring until a smooth batter forms.
  3. Grease a small steaming dish or pan with coconut oil and pour half of the rice cake batter into it.
  4. Spoon the red bean paste evenly over the batter layer, then pour the remaining batter on top to cover the red bean paste.
  5. Prepare a steamer and steam the cake over medium heat for about 20 minutes, or until the rice cake is cooked through and firm to the touch.
  6. Remove the cake from the steamer and let it cool for a few minutes before slicing into pieces.
