- Chicken thighs - 500 grams, bone-in and skin-on
- Coconut aminos - 60 ml
- Chicken broth - 250 ml
- Honey - 1 tablespoon
- Garlic - 4 cloves, minced
- Ginger - 1 inch piece, sliced
- Star anise - 2 whole
- Sichuan peppercorns - 1 teaspoon
- Green onions - 2, chopped
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat sesame oil in a large pot over medium heat. Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes.
- Flip the chicken and add minced garlic, sliced ginger, star anise, and Sichuan peppercorns. Sauté for an additional 2-3 minutes until fragrant.
- Pour in the coconut aminos, chicken broth, and honey. Bring to a simmer, then reduce the heat to low.
- Cover the pot and braise the chicken for about 40-45 minutes, turning occasionally, until the chicken is cooked through and tender.
- Once cooked, remove the chicken and let it rest for a few minutes. Meanwhile, increase the heat to medium-high and let the sauce reduce for about 5-10 minutes until slightly thickened.
- Return the chicken to the pot to coat in the sauce. Serve hot, garnished with chopped green onions.
