Ingredients

  • Chicken thighs - 500 grams, bone-in and skin-on
  • Coconut aminos - 60 ml
  • Chicken broth - 250 ml
  • Honey - 1 tablespoon
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch piece, sliced
  • Star anise - 2 whole
  • Sichuan peppercorns - 1 teaspoon
  • Green onions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat sesame oil in a large pot over medium heat. Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes.
  2. Flip the chicken and add minced garlic, sliced ginger, star anise, and Sichuan peppercorns. Sauté for an additional 2-3 minutes until fragrant.
  3. Pour in the coconut aminos, chicken broth, and honey. Bring to a simmer, then reduce the heat to low.
  4. Cover the pot and braise the chicken for about 40-45 minutes, turning occasionally, until the chicken is cooked through and tender.
  5. Once cooked, remove the chicken and let it rest for a few minutes. Meanwhile, increase the heat to medium-high and let the sauce reduce for about 5-10 minutes until slightly thickened.
  6. Return the chicken to the pot to coat in the sauce. Serve hot, garnished with chopped green onions.
