Ingredients

  • Adzuki beans - 100 grams
  • Water - 1 liter
  • Rock sugar - 50 grams
  • Coconut milk - 100 milliliters
  • Pandan leaves (optional) - 1 leaf

Steps

  1. Rinse the adzuki beans under cold water to remove any impurities.
  2. Soak the adzuki beans in water for at least 4 hours or overnight, then drain.
  3. In a pot, combine the soaked adzuki beans and 1 liter of fresh water. Bring to a boil over medium heat.
  4. Once boiling, reduce the heat to low and simmer the beans for about 30 minutes, or until they are soft.
  5. Add the rock sugar to the pot, stirring until dissolved. If using, tie the pandan leaf in a knot and add it to the pot.
  6. Continue to simmer for an additional 10 minutes to infuse the flavor of the pandan.
  7. Remove the pandan leaf, then stir in the coconut milk and heat for another 5 minutes, ensuring not to boil.
  8. Serve the red bean soup warm in bowls.
