Ingredients
- Adzuki beans - 100 grams
- Water - 1 liter
- Rock sugar - 50 grams
- Coconut milk - 100 milliliters
- Pandan leaves (optional) - 1 leaf
Steps
- Rinse the adzuki beans under cold water to remove any impurities.
- Soak the adzuki beans in water for at least 4 hours or overnight, then drain.
- In a pot, combine the soaked adzuki beans and 1 liter of fresh water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and simmer the beans for about 30 minutes, or until they are soft.
- Add the rock sugar to the pot, stirring until dissolved. If using, tie the pandan leaf in a knot and add it to the pot.
- Continue to simmer for an additional 10 minutes to infuse the flavor of the pandan.
- Remove the pandan leaf, then stir in the coconut milk and heat for another 5 minutes, ensuring not to boil.
- Serve the red bean soup warm in bowls.
