- Red kidney beans - 100g (cooked)
- Vegetable broth - 300ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2, chopped
- Carrot - 1 medium, diced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and vegetable broth, and bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, heat a non-stick skillet over medium heat and add sesame oil.
- Add minced garlic and ginger to the skillet, sautéing for about 1 minute until fragrant.
- Stir in the diced carrot and cook for 3-4 minutes until slightly softened.
- Add the cooked red kidney beans, soy sauce, and black pepper to the skillet, mixing well and cooking for another 2 minutes to heat through.
- Once the rice is cooked, fluff it with a fork and then stir it into the skillet with the bean and vegetable mixture.
- Adjust the seasoning with salt and additional soy sauce if needed, then remove from heat.
- Serve hot, garnished with chopped green onions and cilantro.
