Ingredients

  • Adzuki beans - 100 grams
  • Water - 300 ml for cooking + 50 ml for blending
  • Brown sugar - 30 grams
  • Glutinous rice flour - 50 grams
  • Coconut milk - 50 ml
  • Baking powder - 1 teaspoon
  • Salt - a pinch

Steps

  1. Rinse the adzuki beans under cold water and soak them in water for at least 4 hours or overnight.
  2. Drain the beans and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 30-40 minutes until soft.
  3. Once cooked, drain the beans and transfer them to a blender. Add 50 ml of water and brown sugar, then blend until smooth.
  4. In a mixing bowl, combine the glutinous rice flour, baking powder, and a pinch of salt. Mix well.
  5. Add the blended red bean mixture and coconut milk to the dry ingredients. Stir until a smooth batter forms.
  6. Pour the batter into a lightly greased steaming dish or mold, spreading it evenly.
  7. Prepare a steamer with boiling water and place the dish inside. Cover and steam for about 20-25 minutes, or until the cake is firm to the touch.
  8. Once done, remove the cake from the steamer and let it cool for a few minutes before slicing and serving.
