  • Green beans - 100 grams, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Scallions - 2, sliced for garnish

Steps

  1. Rinse the millet under cold water until the water runs clear. This helps to remove any bitterness.
  2. In a medium saucepan, combine the rinsed millet and 250 milliliters of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the millet is tender and water is absorbed.
  3. While the millet is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add the diced carrot, bell pepper, and chopped green beans to the skillet. Sauté the vegetables for about 5-7 minutes, until they are tender but still crisp.
  5. Once the millet is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine.
  6. Pour in the coconut aminos, and season with salt and black pepper to taste. Stir everything together and cook for an additional 2-3 minutes to heat through.
