Ingredients

  • Barley - 100 grams
  • Water - 500 ml
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the barley under cold water and drain.
  2. In a medium pot, bring 500 ml of water to a boil, add the rinsed barley, and reduce to a simmer.
  3. Cover and cook for about 30 minutes or until the barley is tender and water is absorbed.
  4. In a skillet, heat the sesame oil over medium heat and add minced garlic and grated ginger, sautéing until fragrant.
  5. Add diced carrots and bell pepper to the skillet, cooking for about 5 minutes until they are tender.
  6. Stir in the cooked barley, coconut aminos, salt, and black pepper; mix well and cook for an additional 3-5 minutes to heat through.
  7. Remove from heat, and sprinkle chopped green onions and fresh cilantro on top before serving.
