Ingredients

  • Chinese eggplant - 300 grams

  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, chopped (for garnish)
  • Water - 150 milliliters

Steps

  1. Wash the Chinese eggplant and cut it into 5 cm long strips, then set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Add the minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.
  4. Add the eggplant strips to the skillet, cooking for 5-7 minutes until they start to soften and turn golden.
  5. In a small bowl, mix the soy sauce, rice vinegar, sugar, and sesame oil together.
  6. Pour the sauce mixture over the eggplant and add water. Stir to combine.
