Ingredients

  • Pumpkin - 400 grams, peeled and diced
  • Carrot - 100 grams, peeled and chopped
  • Ginger - 1 tablespoon, minced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Soy sauce - 1 tablespoon
  • Spring onion - 2 stalks, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Heat the olive oil in a pot over medium heat. Add the minced ginger and garlic, and sauté for about 2 minutes until fragrant.
  2. Add the diced pumpkin and chopped carrot to the pot. Stir and cook for another 5 minutes.
  3. Pour in the vegetable broth, bring to a boil, then reduce the heat. Simmer for 15-20 minutes, or until the pumpkin and carrot are tender.
  4. Remove the pot from heat. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender and blend in batches.
  5. Stir in the coconut milk, soy sauce, and season with salt, black pepper, and chili flakes if using. Heat the soup gently for another 2-3 minutes.
  6. Serve hot, garnished with chopped spring onions.
