Ingredients
- Pumpkin - 400 grams, peeled and diced
- Carrot - 100 grams, peeled and chopped
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Soy sauce - 1 tablespoon
- Spring onion - 2 stalks, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chili flakes - 1/2 teaspoon (optional)
Steps
- Heat the olive oil in a pot over medium heat. Add the minced ginger and garlic, and sauté for about 2 minutes until fragrant.
- Add the diced pumpkin and chopped carrot to the pot. Stir and cook for another 5 minutes.
- Pour in the vegetable broth, bring to a boil, then reduce the heat. Simmer for 15-20 minutes, or until the pumpkin and carrot are tender.
- Remove the pot from heat. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender and blend in batches.
- Stir in the coconut milk, soy sauce, and season with salt, black pepper, and chili flakes if using. Heat the soup gently for another 2-3 minutes.
- Serve hot, garnished with chopped spring onions.
