Ingredients

  • Pumpkin puree - 200 grams
  • Glutinous rice - 100 grams
  • Water - 600 ml
  • Coconut milk - 100 ml
  • Maple syrup - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Chopped walnuts - 30 grams
  • Chia seeds - 1 tablespoon

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for about 30 minutes.
  2. In a medium pot, add the soaked rice and 600 ml of water, bringing it to a boil over medium heat.
  3. Once boiling, reduce the heat to low and let it simmer for about 15 minutes, stirring occasionally.
  4. Add the pumpkin puree, coconut milk, maple syrup, salt, and ground cinnamon to the pot, stirring well to combine.
  5. Continue to cook for another 5-10 minutes until the porridge reaches a creamy consistency.
  6. Remove from heat and let it sit for a few minutes to thicken.
  7. Serve warm, topped with chopped walnuts and chia seeds.
