- Pumpkin puree - 200 grams
- Glutinous rice - 100 grams
- Water - 600 ml
- Coconut milk - 100 ml
- Maple syrup - 2 tablespoons
- Salt - 1/4 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Chopped walnuts - 30 grams
- Chia seeds - 1 tablespoon
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for about 30 minutes.
- In a medium pot, add the soaked rice and 600 ml of water, bringing it to a boil over medium heat.
- Once boiling, reduce the heat to low and let it simmer for about 15 minutes, stirring occasionally.
- Add the pumpkin puree, coconut milk, maple syrup, salt, and ground cinnamon to the pot, stirring well to combine.
- Continue to cook for another 5-10 minutes until the porridge reaches a creamy consistency.
- Remove from heat and let it sit for a few minutes to thicken.
- Serve warm, topped with chopped walnuts and chia seeds.
