Ingredients

  • Pork tenderloin - 300 grams, thinly sliced
  • Bell pepper (any color) - 1 medium, sliced
  • Broccoli florets - 150 grams
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (or coconut aminos for a keto option) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Red chili flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add the sliced pork to the skillet and season with salt and black pepper. Stir-fry for about 5-7 minutes until the pork is browned and cooked through.
  3. Remove the pork from the skillet and set aside.
  4. In the same skillet, add minced garlic and ginger, stirring for about 30 seconds until fragrant.
  5. Add the sliced bell pepper and broccoli florets to the skillet, stir-frying for another 3-4 minutes until the vegetables are tender-crisp.
  6. Return the cooked pork to the skillet and pour in the soy sauce and sesame oil. If using, add red chili flakes for heat.
  7. Toss everything together until evenly coated and heated through, about 2 minutes.
  8. Garnish with chopped green onions before serving.
