Ingredients

  • Pork ribs - 500 grams
  • Fermented black beans - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Ginger, minced - 1 tablespoon
  • Green onions, chopped - 2 stalks
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Red chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Water - 200 ml

Steps

  1. Preheat your oven to 150°C (300°F).
  2. Rinse the pork ribs under cold water and pat dry with paper towels.
  3. In a mixing bowl, combine fermented black beans, minced garlic, minced ginger, coconut aminos, sesame oil, rice vinegar, honey, red chili flakes, salt, and pepper to create the marinade.
  4. Rub the marinade all over the pork ribs, ensuring they are well coated. Let it marinate for at least 30 minutes, or ideally overnight in the refrigerator.
  5. Place the marinated ribs in a baking dish and add 200 ml of water to the bottom.
  6. Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 1 hour.
  7. After 1 hour, remove the foil and increase the oven temperature to 200°C (400°F).
  8. Bake for an additional 20-30 minutes, basting the ribs with the pan juices every 10 minutes until they are caramelized and slightly crispy on the edges.
  9. Remove from the oven and let the ribs rest for 5 minutes.
  10. Garnish with chopped green onions before serving.
